There are many winter vegetables to choose from to make salads and cooked dishes. Celery root (celeriac) makes a tasty and healthful salad. You will recognize the celery root as a large brown bulb with a rough outside. You may find most of the ingredients for this salad in your kitchen or you can buy them at your local grocery store. This salad makes a nice addition to the traditional Thanksgiving fare.
What You'll Need:
2 Celery Roots
Sharp Knife or a Hand-Held Julienne Slicer
Seasonings: Tarragon, Basil, Oregano
Salt and Pepper to Taste
Bounty Paper Towel
Wash the celery root with plain water and dry thoroughly with a Bounty paper towel. Carefully, using a sharp knife, peel the skin off the celery root. Rinse the celery root once again and dry thoroughly. Slice the celery root in half with the knife, both vertically and horizontally. Cut small strips about the size of matches. If you are using a julienne cutter, follow the directions.
Sprinkle the celery root slices with lemon. This helps retain color and gives extra flavor. Add 1/2 cup of mayonnaise and 1/2 cup of sour cream in a bowl. Add all the seasonings and blend well. Taste to see how much salt and pepper you want to add. Gently blend in the celery root strips.
Store the salad in the refrigerator until ready to serve.
